Sweet Potato Lasagna Recipe

Ingredients 

Main Ingredients

  • 3 large Sweet Potatoes peeled and sliced thin
  • 2 cups Ricotta Cheese
  • 2 cups Mozzarella Cheese shredded
  • 1 cup Parmesan Cheese grated
  • 1 jar Marinara Sauce
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Dried Oregano

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  3. In a baking dish, spread a thin layer of marinara sauce.
  4. Layer sweet potato slices over the sauce.
  5. Spread a layer of ricotta cheese over the sweet potatoes.
  6. Sprinkle mozzarella and Parmesan cheese over the ricotta.
  7. Repeat layers until all ingredients are used, ending with a layer of cheese on top.
  8. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until cheese is golden and bubbly.
  9. Let it cool for a few minutes before serving. Enjoy!
