Ingredients 

Main Ingredients

  • 2 cups Kale chopped
  • 2 medium Sweet potatoes peeled and cubed
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Quinoa cooked
  • ½ cup Feta cheese crumbled
  • ¼ cup Dried cranberries

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast in the preheated oven for 25 minutes, or until tender and slightly browned.
  4. In a large mixing bowl, massage the chopped kale with the remaining 1 tablespoon of olive oil until it becomes tender.
  5. Add the roasted sweet potatoes, cooked quinoa, feta cheese, and dried cranberries to the bowl with the kale. Toss to combine.
  6. Serve immediately or chill in the fridge for later.
