Main Ingredients
- 2 cups Sweet Potatoes peeled and cubed
- 1 can Chickpeas drained and rinsed
- 2 tablespoons Tahini
- 2 tablespoons Olive Oil
- 1 clove Garlic minced
- 1 teaspoon Ground Cumin
- 1 teaspoon Salt
- 2 tablespoons Lemon Juice freshly squeezed
Preheat the oven to 400°F (200°C).
Place the sweet potatoes on a baking sheet and roast for 20 minutes or until tender.
In a blender, combine the roasted sweet potatoes, chickpeas, tahini, olive oil, garlic, cumin, salt, and lemon juice.
Blend until smooth and creamy. Add water if needed to reach desired consistency.
Serve with pita bread or fresh veggies.
