  • 2 medium sweet potatoes peeled and diced
  • 1 small onion diced
  • 1 medium bell pepper diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 0.5 teaspoon cumin
  • 0.25 teaspoon cayenne pepper optional
  • to taste salt and pepper
  • for garnish fresh parsley optional

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes, onion, and bell pepper. Cook until tender, about 10-15 minutes.
  3. Add garlic, paprika, cumin, cayenne pepper, salt, and pepper. Cook for another 5 minutes.
  4. Garnish with fresh parsley if desired and serve hot.
