  • 2 tablespoon olive oil

  • Fresh thyme for garnish

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Slice sweet potatoes into thin rounds.
  3. Drizzle with olive oil, salt, and pepper.
  4. Roast for 20 minutes until tender.
  5. Slice baguette and toast in the oven for 5 minutes.
  6. Top each slice with roasted sweet potato and crumbled feta.
  7. Garnish with fresh thyme.
