Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and chopped
  • 1 can coconut milk
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 3 cups vegetable broth
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until softened.
  3. 3. Add the chopped sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender, about 20 minutes.
  4. 4. Stir in the coconut milk, salt, and pepper. Simmer for another 5 minutes.
  5. 5. Use a blender to puree the soup until smooth. Adjust seasoning if needed.
  6. 6. Serve hot and enjoy!
