Ingredients

  • 2 cups Sweet Potatoes peeled and diced
  • 1 can Black Beans drained and rinsed
  • 1 can Diced Tomatoes with juice
  • 1 cup Vegetable Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. 2. Add the minced garlic, chili powder, cumin, and paprika. Cook for another minute until fragrant.
  3. 3. Add the diced sweet potatoes, black beans, diced tomatoes with juice, and vegetable broth. Stir to combine.
  4. 4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the sweet potatoes are tender.
  5. 5. Season with salt and black pepper to taste. Serve hot.
