Ingredients

  • 1 large sweet potato peeled and cubed
  • 1 can black beans drained and rinsed
  • ½ cup breadcrumbs
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Place sweet potato cubes on a baking sheet and bake for 20 minutes or until tender.
  3. In a mixing bowl, mash the baked sweet potato with a fork.
  4. Add black beans, breadcrumbs, cumin, paprika, salt, and pepper to the bowl. Mix well.
  5. Form the mixture into 4 patties.
  6. Place the patties on the baking sheet and bake for 10 minutes on each side.
