Sweet Potato and Black Bean Burrito

Main Ingredients
- 2 medium sweet potatoes peeled and diced
- 1 can black beans drained and rinsed
- 1 small red onion diced
- 1 bell pepper bell pepper diced
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 4 large tortillas
- 1 cup shredded cheese optional
- 1 avocado sliced, optional
- Salsa optional
Preheat oven to 400°F (200°C).
Toss sweet potatoes with a bit of oil, salt, and pepper. Roast for 20 minutes or until tender.
In a pan, sauté onion, bell pepper, and garlic until soft.
Add black beans, cumin, and chili powder. Cook for another 5 minutes.
Mix in roasted sweet potatoes.
Warm tortillas and fill with the sweet potato and black bean mixture.
Add cheese, avocado, and salsa if desired. Roll up and serve.
