Ingredients 

Main Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 can black beans drained and rinsed
  • 1 small red onion diced
  • 1 bell pepper bell pepper diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large tortillas
  • 1 cup shredded cheese optional
  • 1 avocado sliced, optional
  • Salsa optional

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with a bit of oil, salt, and pepper. Roast for 20 minutes or until tender.
  3. In a pan, sauté onion, bell pepper, and garlic until soft.
  4. Add black beans, cumin, and chili powder. Cook for another 5 minutes.
  5. Mix in roasted sweet potatoes.
  6. Warm tortillas and fill with the sweet potato and black bean mixture.
  7. Add cheese, avocado, and salsa if desired. Roll up and serve.
