Ingredients

  • 4 cups Day-old bread, cubed
  • 3 Sweet peppers, sliced
  • 1 cup Cherry tomatoes, halved
  • ½ cup Red onion, thinly sliced
  • ¼ cup Fresh basil, chopped
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • to taste Salt and pepper

Instructions 

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. Spread the cubed bread on a baking sheet and toast in the oven for about 10 minutes, until golden brown.
  3. 3. In a large mixing bowl, combine the toasted bread, sweet peppers, cherry tomatoes, red onion, and basil.
  4. 4. Drizzle with olive oil and red wine vinegar. Season with salt and pepper to taste.
  5. 5. Toss everything together until well mixed. Let it sit for about 10 minutes before serving to allow the flavors to meld.
