Ingredients 

Main Ingredients

  • 4 cups fresh corn kernels about 4 ears of corn
  • 1 cup cucumber peeled and chopped
  • 1 cup yellow bell pepper chopped
  • ¼ cup red onion chopped
  • 2 cloves garlic minced
  • 2 tablespoon olive oil
  • 2 tablespoon white wine vinegar
  • 2 cups water
  • to taste salt and pepper

Instructions

  3. 3. Chill in the refrigerator for at least 1 hour before serving.
  4. 4. Serve cold, garnished with extra corn kernels or chopped vegetables if desired.
