Instructions
In a saucepan, combine tamarind paste, brown sugar, and water. Whisk until well mixed.
Place the saucepan over medium heat and bring to a simmer, stirring occasionally.
Add soy sauce, chili flakes (if using), and garlic powder. Continue to simmer for about 5-7 minutes until the sauce thickens.
Remove from heat and let it cool. The sauce will thicken more as it cools.
Store in an airtight container in the refrigerator for up to a week.
