Instructions
Heat the wok over medium-high heat and add the vegetable oil.
Add the pork and stir-fry until browned and cooked through. Remove and set aside.
Add the bell peppers and onion to the wok and stir-fry until tender.
Return the pork to the wok and add the pineapple chunks.
In a bowl, mix together the ketchup, rice vinegar, soy sauce, and brown sugar. Pour into the wok.
Bring to a boil and then add the cornstarch mixture. Stir until the sauce thickens.
Serve hot over rice.
