Ingredients

Main Ingredients

  • 4 Sweet Potatoes
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn Kernels fresh or frozen
  • 1 Red Bell Pepper diced
  • 2 tablespoon Chipotle Peppers in Adobo Sauce chopped
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • 1 cup Shredded Cheese cheddar or your choice
  • 2 tablespoon Chopped Cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes. Pierce each potato a few times with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45 minutes or until tender.
  4. While the sweet potatoes are baking, mix the black beans, corn, red bell pepper, chipotle peppers, ground cumin, and salt in a bowl.
  5. Once the sweet potatoes are done, let them cool slightly. Cut them in half and scoop out some of the flesh to make room for the filling.
  6. Stuff the sweet potatoes with the bean mixture and top with shredded cheese.
  7. Return the stuffed sweet potatoes to the oven for about 10 minutes or until the cheese is melted and bubbly.
  8. Garnish with chopped cilantro and serve.
