  • 1 cup orzo
  • 2 cups summer squash, diced
  • 1 cup corn kernels fresh or frozen
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • ¼ cup Parmesan cheese, grated

Instructions 

  1. 1. Cook the orzo according to package instructions. Drain and set aside.
  2. 2. In a large skillet, heat olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  3. 3. Add the diced summer squash and corn kernels to the skillet. Cook until tender, about 5-7 minutes.
  4. 4. Stir in the cooked orzo and grated Parmesan cheese. Season with salt and pepper to taste.
