- 4 large tomatoes tops cut off and insides scooped out
- 1 cup cooked rice
- ½ cup grated cheese cheddar or mozzarella
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 clove garlic minced
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the cooked rice, grated cheese, basil, parsley, garlic, salt, and pepper.
Stuff each tomato with the rice mixture and place them in a baking dish.
Bake in the preheated oven for 25-30 minutes, or until the tomatoes are tender and the filling is heated through.
