Ingredients

  • 4 large tomatoes tops cut off and insides scooped out
  • 1 cup cooked rice
  • ½ cup grated cheese cheddar or mozzarella
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic minced
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked rice, grated cheese, basil, parsley, garlic, salt, and pepper.
  3. Stuff each tomato with the rice mixture and place them in a baking dish.
  4. Bake in the preheated oven for 25-30 minutes, or until the tomatoes are tender and the filling is heated through.
  5. Serve hot and enjoy!
