Ingredients

  • 2 acorn squash
  • 1 cup quinoa, cooked
  • 1 apple, diced
  • ½ cup dried cranberries
  • ½ cup chopped pecans
  • 1 teaspoon cinnamon
  • 2 tablespoon maple syrup
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. Place the squash halves cut side down on a baking sheet and bake for 30 minutes.
  4. In a mixing bowl, combine cooked quinoa, diced apple, dried cranberries, chopped pecans, cinnamon, and maple syrup. Season with salt and pepper to taste.
  5. Remove the squash from the oven, flip them over, and stuff each half with the quinoa mixture.
  6. Return to the oven and bake for an additional 15 minutes.
  7. Serve warm and enjoy!
