Shortcake
- 2 cups all-purpose flour
- ¼ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ⅔ cup milk
Strawberries
- 1 lb fresh strawberries, hulled and sliced
- ¼ cup sugar
Whipped Cream
- 1 cup heavy whipping cream
- 2 tablespoon sugar
- 1 teaspoon vanilla extract
Preheat oven to 425°F (220°C).
In a mixing bowl, combine flour, sugar, baking powder, and salt.
Cut in the cold butter until the mixture resembles coarse crumbs.
Gradually add milk, stirring until just combined.
Drop dough by spoonfuls onto a baking sheet.
Bake for 12-15 minutes or until golden brown. Let cool.
Mix strawberries with sugar and let sit for at least 30 minutes.
Whip the cream with sugar and vanilla until soft peaks form.
To assemble, split shortcakes in half, top with strawberries and whipped cream.
