Crust and Topping
- 1 cup all-purpose flour
- ½ cup sugar
- ½ cup butter, melted
Filling
- 2 cups strawberries, chopped
- 2 cups rhubarb, chopped
- ½ cup sugar
- 2 tablespoon cornstarch
Preheat your oven to 350°F (175°C). Grease a baking dish.
In a mixing bowl, combine flour, sugar, and melted butter. Mix until crumbly.
Press half of the mixture into the bottom of the prepared baking dish to form the crust.
In another bowl, combine strawberries, rhubarb, sugar, and cornstarch. Mix well.
Spread the fruit mixture evenly over the crust.
Sprinkle the remaining crumb mixture over the top of the fruit layer.
Bake in the preheated oven for 45 minutes or until the top is golden brown.
Allow to cool before cutting into bars. Enjoy!
