Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup strawberries sliced
  • ½ cup feta cheese crumbled
  • ¼ cup fresh mint chopped
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
  3. 3. In a mixing bowl, combine cooked quinoa, strawberries, feta cheese, and fresh mint.
  4. 4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Serve immediately or chill in the refrigerator for later.
