Ingredients 

Salad Ingredients

  • 4 cups Mixed greens washed and dried
  • 1 cup Cherry tomatoes halved
  • 1 piece Cucumber sliced
  • 0.25 cup Red onion thinly sliced
  • 0.25 cup Feta cheese crumbled

Arugula Hummus Ingredients

  • 1 can Chickpeas drained and rinsed
  • 2 cups Arugula packed
  • 2 tablespoons Tahini
  • 1 piece Garlic clove minced
  • 2 tablespoons Lemon juice freshly squeezed
  • 0.25 cup Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions 

  1. 1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. 2. In a blender, combine chickpeas, arugula, tahini, garlic, lemon juice, olive oil, salt, and black pepper. Blend until smooth.
  3. 3. Serve the salad with a generous dollop of arugula hummus on the side.
