Salad Ingredients
- 4 cups Mixed greens washed and dried
- 1 cup Cherry tomatoes halved
- 1 piece Cucumber sliced
- 0.25 cup Red onion thinly sliced
- 0.25 cup Feta cheese crumbled
Arugula Hummus Ingredients
- 1 can Chickpeas drained and rinsed
- 2 cups Arugula packed
- 2 tablespoons Tahini
- 1 piece Garlic clove minced
- 2 tablespoons Lemon juice freshly squeezed
- 0.25 cup Olive oil
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
2. In a blender, combine chickpeas, arugula, tahini, garlic, lemon juice, olive oil, salt, and black pepper. Blend until smooth.
3. Serve the salad with a generous dollop of arugula hummus on the side.
