Ingredients

  • 6 eggs
  • ½ cup milk
  • 1 cup chopped asparagus
  • ½ cup chopped spring onions
  • ¼ cup grated Parmesan cheese
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the eggs, milk, salt, and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the asparagus and spring onions, and cook until tender, about 5 minutes.
  4. Pour the egg mixture over the vegetables in the skillet. Sprinkle the Parmesan cheese on top.
  5. Transfer the skillet to the preheated oven and bake until the frittata is set, about 15 minutes.
  6. Let the frittata cool slightly before slicing and serving.
