Split Pea Soup Recipe

- 1 lb dried split peas
- 8 cups water
- 1 ham bone
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. Rinse the split peas under cold water.
2. In a large pot, combine the split peas, water, and ham bone. Bring to a boil.
3. Reduce heat, cover, and simmer for 1 hour.
4. Add the onion, celery, carrots, garlic, thyme, salt, and pepper. Simmer for another 30 minutes, or until peas are tender.
5. Remove the ham bone, chop any meat left on the bone, and return the meat to the soup. Discard the bone.
6. Adjust seasoning to taste and serve hot.
