Ingredients 

Main Ingredients

  • 2 medium zucchini spiralized
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onion diced
  • 4 cups vegetable broth
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste salt and pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil, then add the diced onion, sliced carrots, and sliced celery. Cook until the vegetables are softened, about 5 minutes.
  2. 2. Add the minced garlic, dried thyme, and dried basil. Cook for another minute until fragrant.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes.
  4. 4. Add the spiralized zucchini noodles to the pot and cook for another 3-5 minutes until the zucchini is tender.
  5. 5. Season with salt and pepper to taste. Serve hot.
