Instructions
1. Heat olive oil in a pot over medium heat.
2. Add chopped onion and minced garlic. Sauté until soft.
3. Add fresh spinach and cook until wilted.
4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
5. Use a blender to puree the soup until smooth.
6. Return soup to pot, stir in milk if using, and season with salt and pepper to taste.
7. Serve hot.
