  • 12 large mushrooms stems removed
  • 1 cup ricotta cheese
  • 1 cup fresh spinach chopped
  • 1 clove garlic minced
  • 0.25 cup Parmesan cheese grated
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, chopped spinach, minced garlic, grated Parmesan cheese, olive oil, salt, and pepper.
  3. Stuff each mushroom cap with the ricotta mixture.
  4. Place the stuffed mushrooms on a baking sheet.
  5. Bake for 20 minutes, or until the mushrooms are tender and the filling is golden.
  6. Serve warm.
