Spinach Ricotta Stuffed Mushroom Recipe

- 12 large mushrooms stems removed
- 1 cup ricotta cheese
- 1 cup fresh spinach chopped
- 1 clove garlic minced
- 0.25 cup Parmesan cheese grated
- 1 tablespoon olive oil
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine ricotta cheese, chopped spinach, minced garlic, grated Parmesan cheese, olive oil, salt, and pepper.
Stuff each mushroom cap with the ricotta mixture.
Place the stuffed mushrooms on a baking sheet.
Bake for 20 minutes, or until the mushrooms are tender and the filling is golden.
Serve warm.
