  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 4 cups vegetable broth
  • 5 cups fresh spinach
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, cook until softened.
  2. Add potatoes and vegetable broth. Bring to a boil, then simmer until potatoes are tender.
  3. Add spinach and cook until wilted. Blend the soup until smooth.
  4. Season with salt and pepper to taste. Serve hot.
