  • 8 oz Pasta any type
  • 4 cups Fresh spinach chopped
  • 1 cup Cherry tomatoes halved
  • 0.5 cup Red onion sliced
  • 0.25 cup Olive oil
  • 2 tablespoon Balsamic vinegar
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine cooked pasta, spinach, cherry tomatoes, and red onion.
  3. 3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. 4. Pour dressing over the pasta salad and toss to combine.
