Spinach Mushroom Quesadillas
Delicious and easy-to-make quesadillas packed with spinach and mushrooms.

Main Ingredients
- 2 cups Spinach fresh
- 1 cup Mushrooms sliced
- 1 cup Cheese shredded
- 4 pieces Tortillas flour or corn
- 1 tablespoon Olive Oil
Heat olive oil in a skillet over medium heat.
Add mushrooms and cook until soft, about 5 minutes.
Add spinach and cook until wilted, about 2 minutes.
Remove vegetables from skillet and set aside.
Place a tortilla in the skillet, sprinkle with cheese, add the spinach and mushroom mixture, and top with more cheese. Place another tortilla on top.
Cook until the bottom tortilla is golden brown, about 2-3 minutes. Flip and cook the other side until golden and the cheese is melted.
Repeat with remaining tortillas and filling.
Cut into wedges and serve warm.
