Ingredients

  • 8 eggs
  • 1 cup fresh spinach chopped
  • 1 cup mushrooms sliced
  • ½ cup onion chopped
  • ½ cup milk
  • ½ cup cheese grated
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and cook until translucent.
  3. Add mushrooms and cook until they release their juices and start to brown.
  4. Add spinach and cook until wilted. Season with salt and pepper.
  5. In a mixing bowl, whisk together eggs and milk. Stir in cheese.
  6. Pour the egg mixture over the vegetables in the skillet. Cook on the stove for a few minutes until the edges start to set.
  7. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is set and golden on top.
  8. Let it cool slightly before slicing and serving.
