Ingredients

  • 6 large eggs
  • 1 cup fresh spinach chopped
  • ½ cup feta cheese crumbled
  • ¼ cup milk
  • ¼ cup chopped onion
  • 1 clove garlic minced
  • to taste Salt and pepper
  • 1 tablespoon olive oil

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk eggs and milk together.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add onion and garlic, cook until softened.
  5. Add spinach, cook until wilted.
  6. Pour egg mixture into the skillet, stir in feta cheese.
  7. Cook on the stove for a few minutes until edges set.
  8. Transfer skillet to the oven, bake for 10-15 minutes until the center is set.
  9. Let cool slightly before slicing and serving.
