  • 2 cups Spinach fresh, chopped
  • 2 medium Potatoes peeled and diced
  • 6 Eggs beaten
  • ½ cup Milk
  • 1 cup Cheese grated
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until tender, about 10 minutes.
  3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a mixing bowl, beat the eggs and mix in milk, grated cheese, salt, and pepper.
  5. Pour the egg mixture over the potatoes and spinach in the skillet. Cook on the stove for a few minutes until the edges start to set.
  6. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is fully set and golden on top.
  7. Remove from the oven and let it cool slightly before serving.
