Ingredients 

Main Ingredients

  • 8 oz fettuccine pasta
  • 2 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • to taste Salt and pepper

Instructions 

  1. 1. Cook the fettuccine pasta according to the package instructions. Drain and set aside.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook until they are tender, about 5 minutes.
  3. 3. Add the minced garlic to the skillet and cook for another minute.
  4. 4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. 5. Pour in the heavy cream and bring to a simmer. Reduce the heat and stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  6. 6. Add the cooked fettuccine to the skillet and toss to coat in the Alfredo sauce. Season with salt and pepper to taste.
  7. 7. Serve immediately, garnished with additional Parmesan cheese if desired.
