Ingredients

  • 4 bell peppers any color
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine chopped spinach, crumbled feta, diced onion, minced garlic, olive oil, salt, and pepper.
  4. Stuff the bell peppers with the spinach and feta mixture.
  5. Place the stuffed peppers in a baking dish and bake for 30 minutes.
  6. Serve hot and enjoy!
