  • 12 large mushrooms stems removed
  • 1 cup spinach chopped
  • ½ cup feta cheese crumbled
  • 1 clove garlic minced
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, crumbled feta, minced garlic, and 1 tablespoon of olive oil. Season with salt and pepper to taste.
  3. Fill each mushroom cap with the spinach and feta mixture.
  4. Place stuffed mushrooms on a baking sheet. Drizzle with remaining olive oil.
  5. Bake for 20 minutes or until mushrooms are tender and filling is golden.
