Instructions
Preheat oven to 375°F (190°C).
In a mixing bowl, combine chopped spinach, crumbled feta, minced garlic, and 1 tablespoon of olive oil. Season with salt and pepper to taste.
Fill each mushroom cap with the spinach and feta mixture.
Place stuffed mushrooms on a baking sheet. Drizzle with remaining olive oil.
Bake for 20 minutes or until mushrooms are tender and filling is golden.
