Ingredients

  • 1 kg Pork shoulder cut into chunks
  • 2 tablespoon Aji amarillo paste
  • 1 tablespoon Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 1 cup Chicken broth
  • 1 large Onion, sliced
  • 1 large Red bell pepper, sliced

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the aji amarillo paste, garlic, cumin, paprika, salt, and black pepper. Add the pork chunks and coat them well with the spice mixture.
  3. Heat the olive oil in a large skillet over medium-high heat. Sear the pork chunks on all sides until browned.
  4. Transfer the seared pork to a baking dish. Add the chicken broth, sliced onion, and red bell pepper to the dish.
  5. Cover the baking dish with foil and bake in the preheated oven for 40 minutes, or until the pork is tender and cooked through.
  6. Remove from the oven and let it rest for a few minutes before serving.
