Main Ingredients
- 2 cups cooked rice
- 1 mango, diced
- 1 avocado, diced
- 1 red bell pepper, diced
- 1 jalapeno, finely chopped
- ¼ cup cilantro, chopped
- 2 tablespoon lime juice
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Cook the rice according to package instructions.
2. In a large mixing bowl, combine the cooked rice, diced mango, avocado, red bell pepper, and jalapeno.
3. Add the chopped cilantro, lime juice, olive oil, salt, and black pepper. Mix well.
4. Serve immediately or chill in the refrigerator for 15 minutes before serving.
