Main Ingredients
- 1 cup Lentils rinsed
- 1 tablespoon Olive Oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Chili Powder
- 4 cups Vegetable Broth
- 1 can Diced Tomatoes
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, sauté until softened.
Stir in cumin, paprika, and chili powder, cook for another minute.
Add lentils, vegetable broth, and diced tomatoes. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, or until lentils are tender.
Season with salt and pepper to taste. Serve hot.
