Ingredients

  • 2 cups Chickpeas cooked or canned, drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin ground
  • 1 teaspoon Paprika smoked
  • ½ teaspoon Chili Powder
  • 1 teaspoon Salt or to taste
  • 4 Tortillas large
  • 1 cup Lettuce shredded
  • 1 cup Tomatoes diced
  • ½ cup Red Onion thinly sliced
  • ½ cup Cucumber diced
  • ¼ cup Yogurt plain, for serving

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the chickpeas, cumin, paprika, chili powder, and salt. Cook for 5-7 minutes, stirring occasionally, until chickpeas are heated through and slightly crispy.
  3. 3. Warm the tortillas in a dry skillet or microwave.
  4. 4. Assemble the wraps by placing a portion of the chickpea mixture onto each tortilla. Top with lettuce, tomatoes, red onion, cucumber, and a dollop of yogurt.
  5. 5. Roll up the tortillas and serve immediately.
