Spicy Chickpea Wraps

Main Ingredients
- 2 cups Chickpeas cooked or canned, drained and rinsed
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin ground
- 1 teaspoon Paprika smoked
- ½ teaspoon Chili Powder
- 1 teaspoon Salt or to taste
- 4 Tortillas large
- 1 cup Lettuce shredded
- 1 cup Tomatoes diced
- ½ cup Red Onion thinly sliced
- ½ cup Cucumber diced
- ¼ cup Yogurt plain, for serving
1. Heat the olive oil in a skillet over medium heat.
2. Add the chickpeas, cumin, paprika, chili powder, and salt. Cook for 5-7 minutes, stirring occasionally, until chickpeas are heated through and slightly crispy.
3. Warm the tortillas in a dry skillet or microwave.
4. Assemble the wraps by placing a portion of the chickpea mixture onto each tortilla. Top with lettuce, tomatoes, red onion, cucumber, and a dollop of yogurt.
5. Roll up the tortillas and serve immediately.
