  • 1 can Chickpeas drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Chili Powder
  • ½ teaspoon Cumin
  • ½ teaspoon Paprika
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Salt
  • 8 pieces Taco Shells
  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes
  • ½ cup Sour Cream
  • ½ cup Shredded Cheese

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add chickpeas, chili powder, cumin, paprika, garlic powder, and salt. Cook for 5-7 minutes, stirring occasionally.
  3. Warm taco shells according to package instructions.
  4. Fill taco shells with chickpea mixture, then top with shredded lettuce, diced tomatoes, sour cream, and shredded cheese.
  5. Serve immediately and enjoy!
