Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until soft.
Stir in minced garlic, cumin, coriander, smoked paprika, and cayenne pepper. Cook for 1 minute.
Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 20-25 minutes.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
