Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon red pepper flakes
  • 2 cans chickpeas, drained and rinsed (15 oz each)
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 5 oz fresh spinach
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, cumin, coriander, paprika, and red pepper flakes. Cook for another 2 minutes, stirring frequently.
  3. Add the chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Stir in the spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
  5. Serve hot and enjoy!
