Spicy Chickpea and Spinach Stew

- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon red pepper flakes
- 2 cans chickpeas, drained and rinsed (15 oz each)
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth
- 5 oz fresh spinach
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic, cumin, coriander, paprika, and red pepper flakes. Cook for another 2 minutes, stirring frequently.
Add the chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes.
Stir in the spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
Serve hot and enjoy!
