Main Ingredients
- 1 cup Lentils rinsed
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 1 teaspoon Turmeric
- 1 teaspoon Paprika
- 4 cups Vegetable Broth
- 1 can Diced Tomatoes
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the cumin, coriander, turmeric, and paprika. Stir well to combine.
5. Pour in the vegetable broth and add the lentils. Bring to a boil.
6. Reduce heat to low, cover, and simmer for 30 minutes or until lentils are tender.
7. Add the diced tomatoes, salt, and pepper. Simmer for another 10 minutes.
8. Serve hot and enjoy!
