Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 0.5 teaspoon Ground Turmeric
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 0.25 cup Chopped Fresh Parsley
  • 0.25 cup Chopped Fresh Mint
  • 1 tablespoon Lemon Juice freshly squeezed

Instructions 

  1. 1. Place the cauliflower florets in a food processor and pulse until they resemble couscous.
  2. 2. Heat the olive oil in a large skillet over medium heat.
  3. 3. Add the ground cumin, ground coriander, ground turmeric, salt, and black pepper. Cook for 1 minute, stirring constantly.
  4. 4. Add the cauliflower couscous to the skillet and cook for 5-7 minutes, stirring occasionally, until tender.
  5. 5. Remove from heat and stir in the chopped parsley, mint, and lemon juice.
  6. 6. Serve warm or at room temperature.
