Main Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon ground turmeric
- ¼ teaspoon chili powder
- 4 cups carrots, chopped
- 1 cup red lentils
- 6 cups vegetable broth
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Stir in the ground cumin, coriander, turmeric, and chili powder. Cook for 1-2 minutes until fragrant.
Add the chopped carrots, red lentils, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 20-25 minutes until the carrots and lentils are tender.
Use a blender to puree the soup until smooth. Season with salt and pepper to taste.
Serve hot.
