Ingredients 

Main Ingredients

  • 4 pcs Carrots peeled and sliced
  • 1 can Chickpeas drained and rinsed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 0.5 teaspoon Paprika
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste
  • 1 tablespoon Lemon Juice freshly squeezed
  • 0.25 cup Fresh Parsley chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss the carrots with 1 tablespoon olive oil, cumin, coriander, paprika, salt, and pepper. Spread on a baking sheet.
  3. Roast in the oven for 20 minutes, or until tender.
  4. In a mixing bowl, combine the roasted carrots, chickpeas, remaining olive oil, lemon juice, and parsley. Toss well.
  5. Serve warm or at room temperature.
