Instructions
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Stir in the rice and cook until lightly browned, about 5 minutes.
Add the diced tomatoes, chicken broth, salt, and cumin. Bring to a boil.
Reduce heat to low, cover, and simmer for 20 minutes.
Stir in the frozen peas and cook for another 5 minutes, or until the peas are heated through.
Fluff the rice with a fork and serve.
