Ingredients 

Main Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 cup frozen peas

Instructions 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the rice and cook until lightly browned, about 5 minutes.
  5. Add the diced tomatoes, chicken broth, salt, and cumin. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes.
  7. Stir in the frozen peas and cook for another 5 minutes, or until the peas are heated through.
  8. Fluff the rice with a fork and serve.
