Spaghetti Carbonara Recipe

- 400 g Spaghetti
- 200 g Pancetta diced
- 2 Large eggs
- 100 g Pecorino Romano cheese grated
- 1 teaspoon Black pepper freshly ground
- 1 clove Garlic optional, peeled and crushed
- to taste Salt
1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente.
2. In a skillet over medium heat, cook the pancetta until crispy. If using garlic, add it to the skillet and cook until fragrant, then remove and discard.
3. In a mixing bowl, beat the eggs and mix in the grated Pecorino Romano cheese and black pepper.
4. Drain the spaghetti, reserving some of the pasta water. Add the hot spaghetti to the skillet with the pancetta and toss to combine.
5. Remove the skillet from the heat and quickly pour in the egg and cheese mixture, tossing everything together. Add reserved pasta water a little at a time to create a creamy sauce.
6. Serve immediately, garnished with extra grated cheese and black pepper if desired.
