Main Ingredients
- 1 can Black Beans drained and rinsed
- 1 cup Corn frozen or fresh
- 1 Red Bell Pepper diced
- ¼ cup Red Onion finely chopped
- 1 Avocado diced
- ¼ cup Cilantro chopped
- 2 tablespoon Olive Oil
- 1 Lime juiced
- 1 teaspoon Cumin
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
In a large mixing bowl, combine black beans, corn, red bell pepper, red onion, avocado, and cilantro.
In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
Pour the dressing over the salad and toss gently to combine.
Serve immediately or refrigerate for later.
