Ingredients 

Main Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or fresh
  • 1 Red Bell Pepper diced
  • ¼ cup Red Onion finely chopped
  • 1 Avocado diced
  • ¼ cup Cilantro chopped
  • 2 tablespoon Olive Oil
  • 1 Lime juiced
  • 1 teaspoon Cumin
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions 

  1. In a large mixing bowl, combine black beans, corn, red bell pepper, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for later.
