Ingredients

  • 3 tablespoon Butter plus extra for greasing
  • 3 tablespoon All-purpose flour
  • 1 cup Milk warmed
  • 4 Eggs separated
  • ½ cup Grated cheese Gruyère or cheddar
  • ¼ teaspoon Salt
  • ¼ teaspoon Cream of tartar

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease the ramekins with butter and set aside.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
  3. Gradually whisk in the warmed milk until the mixture is smooth and thickened. Remove from heat.
  4. Beat the egg yolks and slowly add them to the milk mixture, stirring constantly. Add the grated cheese, salt, and mix well.
  5. In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
  6. Gently fold the egg whites into the cheese mixture. Pour the mixture into the prepared ramekins.
  7. Bake for 20-25 minutes until the soufflés are puffed and golden. Serve immediately.
